The five-seed everything coating — sesame, poppy, garlic, onion, and coarse salt — meets the cool, onion-flecked scallion cream cheese. The savory crunch of the exterior against the smooth, tangy spread. This is the order that has been shouted across deli counters for decades, and for good reason. It is perfect.

Jalapeno Cheddar Bagel — straight, no cream cheese

Our Jalapeno Cheddar bagel does not need accompaniment. The jalapenos bring a slow, building heat. The cheddar adds a sharp tang and a satisfying chew. The sourdough base grounds the whole thing. Eat it straight, with butter if you must, and let the bagel do all the talking. This is Texas in bagel form.

Cinnamon Raisin + Cinnamon Brown Sugar Cream Cheese

Ceylon cinnamon and plump raisins in the bagel meet real brown sugar and more cinnamon in the cream cheese. It tastes like a cinnamon roll crossed with a New York bagel — warm, sweet, tangy from the sourdough, and utterly addictive. Toast the bagel first for maximum effect. The heat brings out the cinnamon aromatics and caramelizes the raisins into little pockets of jam.

This is the foundation of everything. Your bagel choice sets the tone for the entire experience. Going savory? Start with Everything, Asiago, or Jalapeno Cheddar. Going sweet? Cinnamon Raisin or Blueberry Pie. Want to taste pure sourdough craftsmanship? Plain is the answer. Every bagel on our menu is made from the same 48-hour cold-fermented sourdough, hand-rolled, boiled in malt water, and baked fresh daily. The base is always excellent — your choice determines the direction.

Pick Your Spread or Build

Now decide what goes on it. For a quick, satisfying breakfast, choose one of Jen Hilbert's nine house-made cream cheese flavors. For something more substantial, build an egg sandwich with your choice of protein — bacon, sausage, or Taylor ham — and your choice of cheese. Or go the lox route with our full Bagel and Lox, piled high with smoked salmon, capers, red onion, and tomato. There is no wrong answer here, only different moods for different mornings.

Toast or No Toast — Then Enjoy

The final decision. Toasting transforms a bagel: it re-crisps the crust, warms the interior, and releases the aromatics of whatever toppings or mix-ins are baked in. For cream cheese pairings, we generally recommend toasting — the warm bagel melts the spread slightly, creating a better texture. For sandwich builds, we always toast. For eating a fresh bagel straight with nothing on it, skip the toast if it is within an hour of baking. Then take a bite, and understand why people drive across town for this.
