The 48-Hour Difference

Step 1

The Living Starter

Every batch begins with our 2+ year old sourdough culture. This living starter gives our bagels their distinctive tang and complex flavor that commercial yeast simply cannot replicate.

Step 2

48 Hours of Fermentation

Our dough undergoes a triple fermentation process over 48 hours. This slow, cold rise develops deep flavor, better texture, and improved digestibility.

Step 3

The Boil

Each bagel is kettle-boiled in malt water before baking. This crucial step creates the signature shiny crust and dense, chewy interior that defines a real bagel.

Step 4

Baked Fresh Daily

Baked every morning at 500 degrees until golden. We sell out by afternoon because we bake in batches, not in bulk. When they are gone, they are gone.
