Real Ingredients, Real Heat
We do not use jalapeño flavoring or cheddar powder. Our jalapeño cheddar bagel is made with real diced jalapeño peppers and sharp cheddar cheese, folded directly into our sourdough dough before shaping. When the bagel bakes, the cheese melts into the dough and forms a crispy, golden layer on the outside, while the jalapeño pieces soften just enough to release their heat without losing their texture.
The result is a bagel where every single bite has both cheese and pepper in it. There are no dead spots, no bites of plain dough. The jalapeño and cheddar are distributed throughout, so the flavor is consistent from the first bite to the last. That is the difference between a bagel made with real ingredients and one that relies on flavorings.
We developed this recipe specifically for Texas. Dan grew up eating bagels on the East Coast, but when he moved to Dallas-Fort Worth, he knew the menu needed something that spoke to local tastes. Jalapeño and cheddar is a combination Texans understand intuitively, and putting it on a proper sourdough bagel turned out to be one of the best decisions we ever made.
Present but Not Punishing
We get asked about the heat level more than almost anything else. Here is the honest answer: you will notice it. The jalapeño is real, and it has real heat. But it is not the kind of heat that overwhelms everything else. The sharp cheddar rounds it out, the sourdough base provides a tangy counterpoint, and the overall effect is warm and savory rather than aggressively spicy.
Think of it this way: if you can handle salsa on your breakfast tacos, you can handle this bagel. The heat builds gently across each bite and fades quickly, leaving behind the rich, cheesy, tangy flavor of the dough itself. We have had customers who normally avoid spicy food tell us this is their favorite bagel, because the balance is dialed in exactly right. The cheddar acts as a buffer, coating your palate with richness while the jalapeño adds just enough kick to keep things exciting.
