Taylor ham — or pork roll, depending on which side of the New Jersey Turnpike you come from — is a processed pork product that has been a staple of Mid-Atlantic delis and diners since 1856.

The debate over what to call it has divided New Jersey for generations. North Jersey says Taylor ham. South Jersey says pork roll. Central Jersey claims not to exist, which conveniently excuses them from taking a side. What everyone agrees on is this: sliced thin, scored so it does not cup on the griddle, cooked until the edges are crispy and the center is just starting to caramelize — it is one of the best breakfast meats you will ever eat.

The flavor is unique — salty, slightly tangy, with a hint of sweetness and a smoky finish that comes from the curing process. It does not taste like bacon. It does not taste like ham.
